Turkey Brine

1 TBSP chili flakes

2 sprigs rosemary

3 bay leaves

6 cloves

1 stick cinnamon

16 allspice berries

1 TBSP black pepper

1 TBSP mustard seeds

1 cup kosher salt

½ cup brown sugar

1 pint apple cider

6 quarts water


Combine the sugar and salt with 2 quarts of water.  Heat the water until the sugar and salt have dissolved.  Combine with the rest of the ingredients and allow to cool completely.  Submerge the fresh (or unthawed) turkey in the brine for minimum of 1 day; even better if you can brine the turkey for 2 days
