Ham & Potato Chowder

5 lbs potatoes, washed, sliced.  Cook in salted water, water just covering potatoes.
Meanwhile
In saute pan with drizzle olive oil:
2 leeks, washed, diced
Add to leeks, stir well to make paste, cook 4 min.
1 c butter
2/3 c flour
Add paste to tender potatoes in boiling water.
Add:
3 c shredded medium cheddar cheese
2 lb ham, diced
2 tsp Santa Maria seasoning
1 TB salt
1 tsp pepper
Heat through, serve
